Escabeche

  • Fish
  • salt, pepper, vinegar, garlic
  • onion, cut into rings
  • garlics, minced
  • ginger
  • celery, carrots, bell pepper
  • sugar
  • water

Marinate fish on salt, pepper, vinegar and garlic.  Fry the fish.

Saute garlic and ginger.  Add onions, celery and carrots.  Add bell pepper, water, vinegar and sugar.   Let it simmer. Do not cover.
